Mint White Chocolate Chip Cookies

Cookies so good, Santa just might eat the whole plate!  With that being said, make sure you keep some hidden so you too can enjoy these delicious Mint White Chocolate Chip Cookies using our Wobbly Walleye Mint.


  • ½ cup coconut oil, you can also sub for butter

  • 10 Wobbly Walleye Mint leaves, chopped

  • ½ cup brown sugar

  • ¼ cup cacao powder

  • 1 tsp pure vanilla extract

  • 1 egg

  • 1 egg yolk

  • 1 ½ cups all purpose flour

  • 1 tsp baking soda

  • ½ tsp salt

  • ½ cup white chocolate chips


Directions:


  1. Using an electric mixer, cream coconut oil, mint leaves, cacao, brown sugar, vanilla, egg, and egg yolk

  2. In a separate bowl, whisk flour, baking soda, and salt

  3. Slowly add dry ingredients to the wet ingredients while mixing

  4. Add white chocolate chips

  5. Place cookie dough in a bowl and cover.  Chill in the fridge for at least 1 hour

  6. Preheat oven to 350 degrees

  7. Line the baking sheet with parchment paper and place 1 inch balls of dough evenly on the sheet

  8. Cook for 10 minutes

  9. Remove from oven.  Let cool and serve
